Who is the Dom? Chef Matteo "Dom" DiCarlo is a first generation Italian. The name Dom DiCarlo has been carried by his great grandfather, grandfather & Matteo's 9-year-old son Dominick. Chef DiCarlo grew up in Brooklyn, N.Y., but through the years he has operated many of the families restaurants around the east coast and has been living in Noblesville for the past 10 years. Dom learned to make pizza when he was only 7, grinding cheese and sausage in his family's pizzerias. Although he was trained in culinary-arts school, Chef Dom DiCarlo learned many recipes, skills and secrets at his parents' and grandparents' elbows. The downtown Noblesville restaurant is the first DiCarlo has owned. "This is my dream," Dom said. He paid meticulous attention to detail in the restaurant's design and on how to create and attractively present his food, "I want our customers to expect the best at our pizzeria and sub shop. Fresh Italian homestyle cooking is what we do." Dom says, "Family is what's really important we want everyone to be part of our family. We treat every one like they are family." He says faith in his lord and savior Jesus Christ is what make's it all come together for his family. It's best described in his favorite scripture, Ephesians 3: 14-21.
